The filleting knife has a razor sharp steel molybdenum blade which will gently slice through the food with ease, and a soft grip nylon handle with an ergonomic shape for comfort. With a Rockwell rating 56-58, there is great balance between edge retention and sharpenability. This knife is available in 3 colour coded nylon handles which helps to ensure that food contamination is avoided.
